Quinoa and Corn

Well, I didn't take any pictures of my crockpot, but this is what we had for dinner tonight...

and it was delicious!

If you haven't worked with quinoa, it is an interesting ingredient. First of all, it is pronounced, 'key-n-wa." I was first introduced to this grain by our pediatrician. Since my eldest E has never eaten meat and wants nothing to do with it, our Dr. recommended quinoa because of its high saturation of protein. She doesn't love it, maybe I haven't found the right recipe yet, but it is a unique and different addition to recipes. I find this grain, when cooked, to be somewhat pasta like.

I found this recipe to be delightful. It was simple and quick in my crockpot and flavorful. It was much less soup-like and more stew-like or dare I say, even hotdish-like. (Yes, Minnesotan.) I really enjoyed this chowder.
