Easy Apple Crisp

Fall is never truly fall until I have done some baking with apples. This year, we didn't make it to an apple orchard here in CA, but Andrew and Evie did go while in MN. Tomorrow, we are headed to a pumpkin festival and I have a fabulous looking recipe for sweet and salty pumpkin seeds that I am dying to dry! I am sure pumpkin photos will soon follow.
So, even though I did not get to pick any of my own apples, they're still a pretty good deal at the store and I got some to make an apple crisp recently. The process and recipe are what follow :)

Apple Crisp - kraftfoods.com

1/2 C oats
3 graham crackers, crushed
1/3 C brown sugar
1/3 C flour
1/3 C butter - melted
1 tsp cinnamon
1/2 C brown sugar
2 T flour
6 C peeled apple slices (about 5 medium apples)

Preheat oven to 375.
Mix oat, graham crackers, 1/3 C each of brown sugar and flours, butter and 1/2 t of the cinnamon. Blend and set aside.

Mix 1/2 C brown sugar, 2 T four, and remaining 1/2 t cinnamon in large bowl. Add apples - toss to coat.

Place in 8 inch, square baking dish and sprinkle with oat topping.
Bake 35-40 minutes - until apples are tender.

And thats it! Easy, right?! I love the addition of the graham crackers in this recipe. I also love how simple it is and how few dishes I am left to clean up :)

I also love the look on my sweet girl's face when she sees this treat upon waking from her nap!

'twas delicious. and easy.
enjoy.
